    It has to be s-l-o-w cooked over something smoky; there should be a pinkish rim around the edges of the meat when cut, due to stuff soaking in and/or stuff oozing out...brown throughout except for that. Even the charred fat on the outside is good...

    You mean there are places that are different?
    The girls in the Valley can make anything grow....Brisket is the national food here. If you're into LEO things become a game warden and have the best of both worlds.

    Ah yes, the food! I love the food down in Texas. Best BBQ ever. I've yet to find decent BBQ here in Oklahoma.

    There's good Mexican food here too. I'm not talking about those crappy Tex-Mex restaurant chains (i.e. "Jalepeno Tree" and "On the Border"), I mean REAL Mexican food made be REAL Mexicans who barely speak English. Mmmmhhhmmm......

    And we have real chicken fried steak down here too.... and fried everythingelse for that matter.

    a few things to remember for anyone wanting/thinking about moving to texas.

    1. if you beat your wife ( girfriend) in texas the women will shoot you.
    2. if you abuse you children ( or anyone elses children) you will go to prison, they will abuse you there and then kill you.
    3. if you don't work, walfare money is so low you cannot live off of it and you will have to move back where you came from.
    4. if you move to texas you will still never be a texan ( you have to be born here to be a texan).
    5. if your in need of help, your neighbors will help you out.
    6. most texans own guns in there homes and carry guns.
    7. if you try to rob/assault someone in their home they will shoot you and if you do it in your neighbors home they will shoot you also.
    8. police officers are liked and respected in texas.
    9. texans like/respect the military men and women.
    10. you will be welcome to come and live in texas, so come on down.
    11. most texan are not liberials, most people that are liberials living in texas are not from texas, they just move here and bring their ideas.
    12. don't mess with texas.
    13. treat people with respect and you will be treated with respect.

    it is early, so i will think of some more later and add them to the list.

    so, come on down. welcome to texas.
